I had a couple of apples about to turn and needed to use them. Peaches, blueberries and plums are cluttering my counter, along with corn and tomatoes, so the chances the apples were going to be eaten anytime soon, were slim.
I hadn’t done a strudel in a long time and the recipe seemed simple enough, so here we are. I made two small dishes, so I could freeze one. Each little casserole dish held half the recipe.
Apple Strudel
- 2 1/2 cup sifted flour
- Pinch of salt
- 2 tsp. baking powder
- 1 tbsp. sugar
- 1/2 c. butter, melted
- 3 tsp. boiling water
8×8 baking dish, well-greased
Stir dry ingredients; mix water with butter and add to dry ingredients. Knead well.
Divide dough into 5 parts. Roll each part very thin between wax paper.
In the baking dish, layer dough & filling, ending with dough. Bake in 400° F oven for 30 minutes. Remove, cool and sprinkle with powdered sugar.
Filling:
- 2 tsp. Cinnamon
- 1/4 c. chopped walnuts
- ¼ cup raisins (optional)
- 1/2 c. sugar
- 2 apples, chopped finely
Mix together and spread between layers
After turning on the news briefly this morning, I have been offline the rest of the day. Plan on keeping it that way. I will tell you that the state Democratic Party contacted me yesterday and asked me if I would be interested in running for an office. After I stopped laughing, I told them probably not, but sign me up for voter registration and get out the vote efforts.

@Patricia Kayden: I don’t blame anyone for not wanting to run for office, but we need to remember that whenever people start getting upset when there are districts where the Republican is running unopposed. The other thing to remember with that is that there are places (like some wards in Milwaukee and Madison) where the Dem runs unopposed. Running for office is a tough and often thankless task.

Have never actually had it in the US, but on a trip to Germany I saw it on the menu and decided to try traditional apfelstrudel mit vanillesauce, the way the strudel gods intended. OMG is that good. Had it in its native form a couple of times since. And I still have never had it in the US.
Yours does look good but the sauce is an important part of the experience.

Your al pastor recipe yesterday (or was it Friday?) looks delicious too. A question: is the 12 oz of chipotle in the recipe canned chipotle in adobo sauce? I’m looking forward to trying it in the crockpot. I don’t use any form of pressure cooker after having one explode on me and give me second and third degree burns from shoulder to wrist. Skin grafts are no fun!
I say it exploded, but really I opened it when it was only almost pressurized, so it opened fairly easily. When the top came off the slightly pressurized water turned explosively to steam and scalded my arm on its way to shattering the light above the stove. It was pretty traumatizing.

I too have an al pastor recipe question. How much fat are you trimming off the pork shoulder? You’re taking the fat cap off before cutting and browning, right? Right? :)

@Kay (not the front-pager): Yowza. That sounds horrible. I actually got rid of my pressure cooker and bought the instant pot because after several decades of weekly use, it had issues that would have allowed that to happen, too. Totally understand your reluctance to use one.
And yes, it is in adobo sauce.

@mrmoshpotato: I was thinking of using boneless country-style ribs and then chilling to remove the fat. I figured it would cook well in my crockpot. TaMara, does that soundright to you?

Today was cooking day off for me. Yesterday though… yesterday was 10lbs up jerked smoked back ribs, on a weber kettle. Very difficult process, much harder than my usual smoked Italian sausage. Delicious, but not something i want to do more than once or twice a year.

That would work. I’ve chilled fatty stews, and the fat separates well when chilled.
The shoulder I got has a decent fat cap, and removing the unneeded fat first would be pretty easy.

@mrmoshpotato: Mine was really lean, so I didn’t cut anything off. But if there is a lot, I would, otherwise, it will probably be a very fatty mixture.

Yes, the plastic sleeve worked great! I felt awesome after shaving and showering for the first time since Wednesday. It took forever, though, and was really tiring.
Everything is tiring! I forgot that about being “sick.” I went out to get some groceries, and I was sweating like a field hand by the time I got to the checkout counter. Then I dragged myself over to pick up the Chinese food and straggled home.
The soreness has decreased a lot. Tomorrow I’m going to see what my post-op instructions say about taking the bandages off.
