Tonight’s bonus recipe is Blueberry Coffeecake

Bonus recipe:
Blueberry CoffeeCake
- 2 cups flour
- 1/2 cup sugar
- 3 tsp baking powder
- 1 tsp salt
- 4 tbsp cultured buttermilk powder (or 1 cup butter milk & omit water)
- 1 egg, beaten
- 1 cup water
- 1 tsp vanilla
- ½ cup vegetable oil
- 8 oz frozen blueberries
Topping:
- ½ cup brown sugar
- ¼ cup butter, softened
- ½ cup flour
8×8 baking dish, greased
2 bowls
In bowl, add flour, sugar, baking powder, salt, buttermilk and mix well. Make a well in the center add egg, water & oil. Stir quickly until all everything is mixed well, but don’t over mix. Fold in blueberries. Spread batter evenly in baking dish. In bowl, mix topping ingredients until crumbly. Sprinkle evenly over the top of batter. Bake at 400° for 25-30 minutes, until toothpick comes out clean.

Damn that JefferyW! I just had the best Coho salmon and now he’s got me craving beef. We just came back from out West where we saw the eclipse in Nebraska, and the beef there made near-vegan Mrs. Spanky eat beef damn near every day.

Still plugging away with the FODMAPs elimination thing. The philosophy of the dietician I’m working (remotely) with seems to be to provide way more recipes than anyone could use in a week so there’s something for everyone. My main issue is that most of the dinner recipes make a minimum of 4 servings, so the leftovers pile up quickly even when G and I both eat them for lunch. Tonight I can choose between leftover mustard-tarragon chicken legs or leftover beef stew. I’ll probably cook something new tomorrow night since we’ll be closer to caught up.

I just spent two days in a swampy apartment waiting for a plumber to snake out the grease in my apartment stack. It’s my neighbor’s grease, but it backed up into my side and I couldn’t use the sink for anything and water was dripping all over my basement. I had to remind my neighbor several times to stop using his disposal because it was backing into mine. Fucking old buildings.
I may go raw vegan after this. Though that beef looks very yummy.

3 cups shredded cabbage
1/2 cups thinly sliced cucumbers
1/3 cup blueberries
3T onion (didn’t do)
1/3 cup buttermilk
2T light mayonnaise
1T sipped fresh parsley
1T fresh snipped dill
1 small clove garlic (did’ t do)
1/8 tsp salt
1/8 tsp ground pepper
Make slaw first
6 uncooked bratwurst or dogs
1 1/2 cup of apple juice
Combine Brats or dogs and apple juice in a large pan. Bring to boil. Reduce heat and simmer covered for about 12 mins.
Serve on toasted buns with slaw.
