iPad apps: if you don’t mind paying $6 for a game, Ticket to Ride online can be very addicting.

I can’t say I use it that often, but GarageBand on iPad is pretty amazing. Just playing around with the synthesizers is incredible fun, and an actual musician could do some really neat stuff with it. I like Paprika for cooking, and I use 2do to keep lists and reminders on my iPhone and iPad synced, though I expect the coming iOS 5 update will make it obsolete. Hulu Plus and Netflix are kind of obvious, I suppose.
As for games, I’ll second the recommendation for Carcassonne, which is easily the game I’ve wasted the most time with on iPhone and iPad (it is a universal app). World of Goo is a must-have if you haven’t played it elsewhere (or maybe even if you have). Right now I’m making my way through BattleHeart, which is infectiously charming for what is essentially a distillation of the grinding elements of RPG’s.

The one I’m having the most fun with is Brushes, a painting app. I go to Denver’s City Park Jazz concert series on Sundays, and sketch the band. People are really impressed, which isn’t too bad for somebody who’s the weakest student in his “Fundamentals of Drawing” class. Good times!

I also love SoundHound, which is perfect for me because I hear a song on TV or in a movie I’m watching at home and I wonder who it is. I hit my Soundhound app, it does a quick recording, and then tells me the name of the song, the band, where to buy it on iTunes, and sometimes even the lyrics. It’s cool.

It’s actually possible to get good sound out of an iPad, but it ain’t cheap.
The first and most important thing is to load it with good files. CD-resolution AIFF or Apple Lossless.
The second most important thing is good headphones. Depending on your taste and your budget, that can run you anywhere from $100 to $1,500 (my go-to headphones for mobile use are the Monster Turbine Pro Copper, which can be had for around $350).
Finally, an external digital-to-analogue converter and/or headphone amp. Cypher Labs makes an external asynchronous-USB DAC called the AlgoRhythm Solo ($550, I think) which is reputed to be really good (I haven’t had a chance to play with it). There are a lot of good portable amps out there; I’ve had a Ray Samuels Audio Predator ($475) for about four years, and haven’t heard anything yet that I like better.

I have lots of apps from newspapers, magazines, BBC, France 24 and NPR. (Which I actually use quite a bit because some of the magazines I like are hard to get on the road). I have Kiosque, Kindle, Zino and iBooks. Dropbox (which I highly recommend), CheckPlease, Pages, FedEx Mobile and Delivery Status. Collins French-English dictionary, Le Robert, Bescherelle and Antidote. The gogo Inlight app. In the summer, I load iWatermelon (which seems to actually work). Sid Meier’s Priates. Find my iPhone.
For travel, I like FlightTrack. There are a lot of great apps for travel that I load only when I’m traveling to the destination for which they are useful. Tons of great apps for London and Paris, especially if you use public transit or taxis. (If anybody wants my favorites, just ask because they make life in SF, London and Paris much easier. There are also some really great touristing apps for those cities—-but some crappy one, too )

Recommended Apps: I’m a magazine guy by preference and profession, so my apps skew heavily that way. The app I produce for Automobile Magazine is pretty sweet if I do say so, but it ain’t free. Issues of Car and Driver are free and quite good on iPad. EVO (U.K.) has the best car mag app out there’d, and a sample issue.
Other good mag apps: Popular Mechanics, Esquire, Fortune
Other apps: only non-mag app at the moment is Netflix. Indispensable for streaming.

There have been recent news stories about the popularity (and relative absence of bells and whistles) of the New Yorker magazine app.
They may discretely augment a story with a little video, or have an audio reading of a poem.
But the coolest thing is that you can easily tap through all the cartoons in an issue.
I also like the Economist app, and the ability to mark specific stories for later reading.

I am getting an IPad Friday while the state is having a tax-free weekend. I am planning to get the 16gb wifi 3G. Since I don’t have internet on a phone, do I need the 3G? Or should I get the 3G for the day I have internet on the phone? Please be kind, I am techno-illiterate.
Games– I play Bejeweled and Lumines on my ITouch. I don’t really “get” Angry Birds or PvZ. Even on the ITouch the Kindle app is good for short books.

I like my old vinyl but I got accustomed to the remote control convenience of digital. As a compromise I modded a B&O turntable and added RF remote. Now I can start, stop, pause, backward and forward from anywhere within 400 yards.

Tough question to answer without knowing more about your lifestyle. I never felt like I needed 3G built into my iPad; I can get a wifi connection most places I want to use it. And now that my iPhone can be used as a portable hotspot, I totally don’t need it.
So the question for you to ask yourself is, how often will I be stranded without an internet connection if I don’t have 3G.

Everyone’s answer to that question is different. Here’s mine:
(1) I can carry more books on my iPad than you can fit into any bag that will fit under the seat in front of you.
(2) My iPad boots up in three seconds, has a better screen than your laptop for watching video, and doesn’t become useless when the person in front of you cranks their seat all the way back.
